Seaside Sipping and Dipping by Jennifer Geronaitis

Editor's Note: I like the sound of seaside sipping. It sounds refreshing, relaxing and rejuvenating. It sounds like something that someone of sound mind might do this summer on the sand, in the sunshine, with a striped umbrella, a straw hat and several hours until sunset. Make a splash at your next summer bash with spritzers, smoothies and decadent dips.

Seaside Sipping

Raspberry Teazer (Eat Tea Cookbook)

2 tsp Raspberry Herbal tea leaves or other fruit tea
1 tbsp sugar
8 ounces seltzer or sparkling water
2 thin lemon slices

Bring ½ cup of water just to a boil, stir in the raspberry tea and sugar, and steep for 3 to 4 minutes. Strain and refrigerate. When cool divide the tea between 2 tall glasses, add ice, and pour in 4 ounces of seltzer or sparkling water. Add a lemon slice to each glass and serve.

Orange-Scented Iced Mint Tea (Eat Tea Cookbook)

3 black tea bags of choice
4 mint leaves, coarsely chopped
½ cup fresh orange juice
2 tablespoons simple syrup*
Ice Cubes
Mint leaves for garnish

Bring 2 cups of water just to a boil. Add the tea bags and chopped mint leaves and infuse for 5 minutes. Squeeze and remove the bags. Allow the tea to cool to lukewarm, then strain into 2 tall glasses. Stir ¼ cup of the orange juice and 1 tbsp simple syrup into each glass. add ice cubes, garnish with mint leaves, and serve.

*Simple Syrup-Bring equal amounts of sugar and water slowly to a boil and let the sugar dissolve, stirring occasionally. Store in a glass jar in the refrigerator.

Orange Cream-sicle Smoothie

1 pint vanilla ice cream, slightly softened
2 cans frozen orange juice concentrate, thawed
6 cups of milk

Blend all ingredients until thick and frothy.

Seaside Dipping

Pizza Dip

1 - 8 oz. Package of cream cheese, softened
½ cup dairy sour cream
1 tsp. Dried oregano crushed
1/8 tsp. Garlic powder
1/8 tsp. Crushed red pepper
½ cup pizza sauce
½ cup chopped pepperoni
¼ cup sliced green onion
¼ cup chopped green pepper
½ cup shredded mozzarella cheese.

Beat cream cheese, sour cream, oregano, garlic powder, spread evenly in a 9-10" quiche dish. Spread sauce over the top of cream cheese mixture. Sprinkle pepperoni, green onion and green pepper on top of sauce. Top with Mozzarella cheese. Bake at 350 degrees for 20 minutes. Serve with crackers.

Swiss Cheese and Almond Dip

8 oz. Softened cream cheese
6 oz. Shredded Swiss cheese
1/3 cp Mayonnaise
2 tbsp chopped green onion
1/8 tsp. Nutmeg
1/8 tsp. Pepper
1/3 cup sliced almonds

Mix all ingredients in a bowl (except almonds). Spread In a 9" pie plate. Garnish with almonds. Bake at 350 degrees for 20 minutes. Serve with crackers.

Fruit Dip

1-5 oz. container of Cool Whip (defrosted)
1- 8 oz. container of any smooth fruit flavored yogurt

Mix cool whip and yogurt. Serve with sliced strawberries, grapes, melon balls and sliced apple.
